Description

A hearty and comforting meal featuring tender shredded beef cooked in a crockpot with rich gravy, served over creamy mashed potatoes and roasted asparagus.


Ingredients

  • 3 to 3.5 lb chuck roast
  • 1 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tbsp olive oil (optional, for searing)
  • 1 medium yellow onion, sliced
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp cornstarch + 2 tbsp cold water (slurry, to thicken)
  • 2 1/2 lb Yukon gold or russet potatoes, peeled and cubed
  • 4 tbsp butter
  • 1/2 cup milk (or more as needed)
  • 1/4 cup sour cream (optional, extra creamy)
  • 1 tsp salt, plus more to taste
  • 1/2 tsp black pepper
  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Pat the chuck roast dry and season all over with salt, pepper, and garlic powder.
  2. Optional (but tasty): Sear the roast in a hot skillet with olive oil for 2–3 minutes per side until browned.
  3. Add sliced onion to the bottom of the crockpot. Place the roast on top.
  4. Whisk together beef broth, Worcestershire, soy sauce, tomato paste, and thyme. Pour around the roast. Add bay leaf.
  5. Cover and cook on LOW for 8 hours (or HIGH for 4–5 hours) until fork-tender.
  6. Shred the beef directly in the crockpot with two forks. Remove bay leaf.
  7. To thicken: Stir cornstarch and cold water to make a slurry. Pour into the crockpot and cook 15 minutes on HIGH until the gravy thickens.
  8. Boil potatoes in salted water for 15–20 minutes until very tender. Drain well.
  9. Mash with butter, milk, sour cream (if using), salt, and pepper until creamy.
  10. Heat oven to 425°F. Toss asparagus with olive oil, salt, and pepper.
  11. Roast for 10–12 minutes until tender with lightly crisp tips.

Notes

  • Searing the beef adds extra flavor but is optional.
  • Adjust gravy thickness by adding more or less cornstarch slurry.
  • For creamier mashed potatoes, add more milk or sour cream.
