- 3 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 cup barbecue sauce
- 1 cup beef broth
- 2 tablespoons Worcestershire sauce
- 1 tablespoon brown sugar
- 1 tablespoon apple cider vinegar
Instructions
- Pat the chuck roast dry with paper towels. Season all sides with salt, black pepper, garlic powder, onion powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear the roast for 2 to 3 minutes per side until browned.
- Transfer the roast to the slow cooker.
- In a medium bowl, whisk together barbecue sauce, beef broth, Worcestershire sauce, brown sugar, and apple cider vinegar.
- Pour the sauce mixture over the beef in the slow cooker.
- Cover and cook on low for 8 hours, or until the beef is fork-tender and easy to shred.
- Remove the beef from the slow cooker and shred it with two forks.
- Return the shredded beef to the slow cooker and stir it into the sauce.
- Let it sit for 10 minutes so the beef can soak up the sauce before serving.
Notes
- For extra flavor, marinate the beef in the seasoning overnight.
- Adjust the amount of barbecue sauce to your taste.
- Serve on buns or over rice.
