- 1 lb potato gnocchi (store-bought or fresh)
- 2 tbsp olive oil
- 3 cups fresh spinach
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp freshly cracked black pepper
- 3/4 cup crumbled feta cheese
- 1 tbsp grated parmesan (optional, for garnish)
Instructions
- Heat olive oil in a nonstick skillet over medium-high heat. Add gnocchi and cook until golden and crispy, about 7–8 minutes.
- Add minced garlic and red pepper flakes. Cook for 1 minute until fragrant.
- Add fresh spinach to the pan. Sauté until wilted, about 2–3 minutes.
- Remove from heat and toss in crumbled feta.
- Sprinkle with black pepper and parmesan if using. Serve hot.
Notes
- Adjust salt and red pepper flakes to taste.
- For extra crispiness, avoid overcrowding the pan.
- Fresh gnocchi cooks faster than store-bought.
