Description

A quick and easy weeknight dinner featuring crispy gnocchi, sautéed spinach, and tangy feta cheese.

Ingredients

Scale
  • 1 lb potato gnocchi (store-bought or fresh)
  • 2 tbsp olive oil
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp freshly cracked black pepper
  • 3/4 cup crumbled feta cheese
  • 1 tbsp grated parmesan (optional, for garnish)

Instructions

  1. Heat olive oil in a nonstick skillet over medium-high heat. Add gnocchi and cook until golden and crispy, about 7–8 minutes.
  2. Add minced garlic and red pepper flakes. Cook for 1 minute until fragrant.
  3. Add fresh spinach to the pan. Sauté until wilted, about 2–3 minutes.
  4. Remove from heat and toss in crumbled feta.
  5. Sprinkle with black pepper and parmesan if using. Serve hot.

Notes

  • Adjust salt and red pepper flakes to taste.
  • For extra crispiness, avoid overcrowding the pan.
  • Fresh gnocchi cooks faster than store-bought.
