Creamy Sausage Potato Soup – the ultimate cold-weather comfort food packed with flavor, sausage, potatoes, and creamy goodness in just 45 minutes.
Ingredients
1 lb ground Italian sausage (mild or spicy)
1 tbsp olive oil or butter (if sausage is lean)
1 small onion, finely chopped
2 cloves garlic, minced
3 medium potatoes, peeled and cubed
2 carrots, diced
2 celery stalks, diced
4 cups chicken broth
1 cup heavy cream (or half-and-half)
1/2 cup shredded cheddar cheese (optional but highly recommended)
Salt & pepper to taste
1 tsp dried thyme or Italian seasoning
Fresh parsley or thyme (for garnish)
Instructions
1. In a large pot or Dutch oven, cook sausage over medium heat until browned and crumbled.
2. Add olive oil or butter if needed, then sauté onions, garlic, carrots, and celery until softened.
3. Stir in potatoes, broth, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer for 15–20 minutes.
4. Add heavy cream and cheddar cheese. Stir until smooth and creamy. Simmer for another 5 minutes.
5. Ladle into bowls, garnish with parsley or thyme, and serve hot with crusty bread.
Notes
For extra spice, use hot Italian sausage or red pepper flakes.
Do not boil after adding cream to avoid curdling.
Add spinach or kale at the end for extra nutrition.
Use sweet potatoes instead of regular for a sweeter variation.
