Description
Creamy pasta with seared steak, broccoli, and cherry tomatoes in a garlic parmesan sauce ready in 30 minutes.

- 1 lb sirloin steak (or ribeye), cut into bite-size pieces
- 12 oz penne pasta
- 2 cups broccoli florets
- 1 cup cherry tomatoes
- 2 tbsp olive oil (divided)
- 2 tbsp butter
- 4 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- 1 tsp kosher salt (plus more for pasta water)
- 1/2 tsp black pepper (plus more to taste)
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
- 1/2 cup pasta water (as needed to loosen sauce)
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Cook the pasta & broccoli: Bring a large pot of salted water to a boil. Add penne and cook until al dente. In the last 2 minutes of cooking, add broccoli florets. Drain, reserving 1/2 cup pasta water.
- Sear the steak: Pat steak pieces dry and season with salt and pepper. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear steak in a single layer (work in batches) for 2–3 minutes per side until browned. Remove to a plate.
- Build flavor: Reduce heat to medium. Add 1 tbsp olive oil and butter. Stir in garlic, Italian seasoning, and red pepper flakes; cook 30 seconds until fragrant.
- Make it creamy: Pour in heavy cream and simmer 2–3 minutes. Stir in Parmesan until melted and smooth. Add a splash of reserved pasta water if needed to make the sauce silky.
- Toss it together: Add drained penne + broccoli to the skillet. Add cherry tomatoes and toss to coat. Return steak (and juices) to the pan and gently toss 1–2 minutes to warm through.
- Finish & serve: Taste and adjust salt/pepper. Garnish with parsley and extra Parmesan. Serve hot.
