  • 1 (13.5 oz) can coconut milk (full-fat for extra creamy)
  • 2 cups fresh baby spinach
  • 1 tbsp fish sauce (or 1 tbsp soy sauce)
  • 1 tbsp lime juice (plus wedges for serving)
  • 1/2 tsp salt, plus more to taste
  • 1/4 tsp black pepper
  • Optional garnish: chopped cilantro, sliced green onions, extra lime

Instructions

  1. Sauté aromatics: Heat oil in a large pot over medium heat. Add onion and cook 3–4 minutes until softened. Stir in garlic and ginger for 30 seconds.
  2. Bloom curry paste: Add red curry paste and stir 30–60 seconds until fragrant.
  3. Build the broth: Pour in diced tomatoes and broth. Bring to a gentle simmer for 8–10 minutes.
  4. Make it creamy: Stir in coconut milk, fish sauce (or soy sauce), salt, and pepper. Simmer 2 minutes.
  5. Cook shrimp: Add shrimp and cook 2–3 minutes, just until pink and curled.
  6. Finish: Stir in cooked rice and spinach. Cook 1–2 minutes until spinach wilts. Turn off heat and stir in lime juice.
