Description

Creamy Mushroom Chicken Meatballs—a quick and comforting weeknight dinner ready in 30 minutes.


Ingredients

Scale
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan
  • 2 tbsp chopped parsley
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil (for searing)
  • 2 tbsp butter
  • 8 oz mushrooms, sliced (cremini or baby bella)
  • 2 cloves garlic, minced
  • 1/2 small onion, diced
  • 1/2 tsp thyme (dried or fresh)
  • 1 cup chicken broth
  • 3/4 cup heavy cream (or half and half)
  • Salt & pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Mix ground chicken, breadcrumbs, egg, garlic, Parmesan, parsley, onion powder, salt, and pepper in a bowl. Roll into 1.5-inch meatballs.
  2. Heat olive oil in a skillet. Sear meatballs until browned on all sides (5–7 minutes). Remove from skillet.
  3. Melt butter in the same pan. Sauté mushrooms, onions, garlic, and thyme until tender.
  4. Add chicken broth, scrape up brown bits, and reduce slightly. Stir in heavy cream and simmer for 2–3 minutes.
  5. Return meatballs to the pan and simmer for 5–7 minutes until fully cooked. Garnish with parsley.

Notes

  • Serve with mashed potatoes, rice, or pasta.
  • Substitute heavy cream with half and half for a lighter version.
