Description
This creamy Cajun sausage pasta is a quick, bold, and comforting dinner. Spicy smoked sausage, Cajun spices, and Parmesan cream sauce come together in under 30 minutes.
Ingredients
12 oz penne pasta
1 tbsp olive oil
14 oz smoked sausage, sliced into coins
1 small onion, diced
3 cloves garlic, minced
1 tsp Cajun seasoning (more to taste)
1/2 tsp paprika
1/2 tsp red pepper flakes (optional for heat)
1 cup chicken broth
1 ½ cups heavy cream
1 cup shredded Parmesan cheese
2 cups fresh spinach (or kale)
Salt & black pepper to taste
Fresh parsley & extra cheese for garnish
Instructions
1. Bring a large pot of salted water to a boil and cook pasta until al dente. Drain and set aside.
2. In a skillet, heat olive oil over medium-high heat. Add sausage and cook until browned.
3. Add diced onion and cook until soft, then add garlic and spices. Sauté until fragrant.
4. Deglaze with chicken broth. Add cream and simmer. Stir in Parmesan until smooth.
5. Add spinach and cooked pasta. Toss to coat and season with salt and pepper.
6. Garnish with parsley and extra cheese before serving.
Notes
Adjust Cajun seasoning based on your spice tolerance.
For a richer sauce, simmer a few minutes longer.
Freshly grated Parmesan melts better than pre-shredded.
