Ingredients

- 4 tbsp unsalted butter
- 1 small onion, diced
- 2 cloves garlic, minced
- ¼ cup all-purpose flour
- 2 cups half & half (or whole milk)
- 3 cups chicken broth
- 4 cups broccoli florets, chopped
- 1 cup shredded carrots
- 2 cups sharp cheddar cheese, shredded
- Salt & pepper to taste
- Optional: pinch of paprika or nutmeg for warmth
Instructions
- Melt butter in a pot over medium heat. Sauté onions and garlic until soft.
- Whisk in flour and cook for 1–2 minutes. Slowly add half & half while whisking.
- Pour in chicken broth, then add broccoli and carrots. Simmer for 15–20 minutes until veggies are tender.
- Reduce heat, stir in shredded cheddar until melted. Season with salt, pepper, and optional paprika.
- Serve hot with crusty bread or in a bread bowl.
Notes
- Use sharp cheddar for best flavor.
- Adjust thickness with more broth or milk if needed.
