Thick and creamy broccoli cheddar soup perfect for chilly days and cozy dinners.


Ingredients

  • 4 tbsp unsalted butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 2 cups half & half (or whole milk)
  • 3 cups chicken broth
  • 4 cups broccoli florets, chopped
  • 1 cup shredded carrots
  • 2 cups sharp cheddar cheese, shredded
  • Salt & pepper to taste
  • Optional: pinch of paprika or nutmeg for warmth

Instructions

  1. Melt butter in a pot over medium heat. Sauté onions and garlic until soft.
  2. Whisk in flour and cook for 1–2 minutes. Slowly add half & half while whisking.
  3. Pour in chicken broth, then add broccoli and carrots. Simmer for 15–20 minutes until veggies are tender.
  4. Reduce heat, stir in shredded cheddar until melted. Season with salt, pepper, and optional paprika.
  5. Serve hot with crusty bread or in a bread bowl.
