  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon maple syrup
  • 1/2 cup vanilla Greek yogurt or whipped topping
  • Extra maple syrup for drizzling

Instructions

  1. Whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt in a large bowl.
  2. In another bowl, whisk milk, egg, melted butter, and vanilla extract.
  3. Combine wet and dry ingredients, stirring until just mixed.
  4. Heat a greased skillet over medium heat and pour batter to form pancakes.
  5. Cook until bubbles form, flip, and cook until golden.
  6. For the topping, melt butter in a skillet and add apples, brown sugar, cinnamon, and nutmeg.
  7. Cook until apples soften and caramelize, then stir in maple syrup.
  8. Stack pancakes, top with apples, yogurt, and drizzle with maple syrup.
