Ingredients
1 medium sweet potato
1 cup broccoli florets
200g chicken breast, cut into chunks
1 tbsp butter
1 tbsp olive oil
1 garlic clove, minced
Juice of 1/2 lemon
Salt and black pepper to taste
Optional: chopped parsley for garnish
Instructions
1. Preheat oven to 400°F (200°C). Pierce sweet potato and roast for 45 minutes until soft.
2. Steam broccoli for 4–5 minutes until tender-crisp.
3. In a skillet, heat olive oil. Sauté chicken with salt and pepper until golden and cooked through.
4. Add butter and garlic to the pan. Once fragrant, add lemon juice and toss chicken to coat in sauce.
5. Plate the chicken with broccoli and roasted sweet potato. Garnish with parsley and serve hot.
Notes
You can roast the broccoli instead of steaming for a crispier texture.
Add lemon zest for more citrus punch.
Swap sweet potato for quinoa or brown rice if desired.
