Description

A quick and easy chicken avocado melt sandwich with shredded chicken, creamy avocado, and melted cheese on toasted sourdough bread.


Ingredients

  • 2 slices of sourdough or your favorite sandwich bread
  • 1 cup cooked shredded chicken (rotisserie works great)
  • 1 ripe avocado, mashed
  • 1/2 cup shredded cheddar cheese (or pepper jack for a kick)
  • 1 tbsp butter, softened
  • 1 tbsp chopped fresh cilantro (optional)
  • Salt, pepper, and garlic powder to taste
  • Optional: splash of hot sauce or chipotle mayo for extra flavor

Instructions

  1. Spread butter on one side of each bread slice.
  2. On the non-buttered side, add shredded chicken and season with garlic powder, salt, and pepper. Top with cheese and mashed avocado.
  3. Heat a skillet on medium heat. Place the sandwich butter-side down. Grill until golden and cheese starts to melt. Flip and cook the other side until crispy.
  4. Cut the sandwich in half, sprinkle fresh cilantro on top, and serve with fries or a side salad.
  5. For extra flavor, add hot sauce, jalapeños, or chipotle mayo before grilling.
