Description
A quick and easy chicken avocado melt sandwich with shredded chicken, creamy avocado, and melted cheese on toasted sourdough bread.

- 2 slices of sourdough or your favorite sandwich bread
- 1 cup cooked shredded chicken (rotisserie works great)
- 1 ripe avocado, mashed
- 1/2 cup shredded cheddar cheese (or pepper jack for a kick)
- 1 tbsp butter, softened
- 1 tbsp chopped fresh cilantro (optional)
- Salt, pepper, and garlic powder to taste
- Optional: splash of hot sauce or chipotle mayo for extra flavor
Instructions
- Spread butter on one side of each bread slice.
- On the non-buttered side, add shredded chicken and season with garlic powder, salt, and pepper. Top with cheese and mashed avocado.
- Heat a skillet on medium heat. Place the sandwich butter-side down. Grill until golden and cheese starts to melt. Flip and cook the other side until crispy.
- Cut the sandwich in half, sprinkle fresh cilantro on top, and serve with fries or a side salad.
- For extra flavor, add hot sauce, jalapeños, or chipotle mayo before grilling.
