Description

A hearty one-pan meal combining classic sloppy joe flavors with tender potatoes and melted cheese.


Ingredients

  • 1 1/2 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 lb ground beef
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tbsp tomato paste
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tbsp brown sugar
  • 1/2 tsp chili powder
  • 1/2 cup beef broth (or water)
  • 1 1/2 cups shredded cheddar cheese (or cheddar-jack)
  • 2 tbsp sliced green onions (for topping)

Instructions

  1. Heat a large skillet over medium-high heat. Add olive oil and the halved baby potatoes. Season with salt, pepper, and smoked paprika. Cook 12–15 minutes, stirring occasionally, until browned and fork-tender.
  2. Push potatoes to the edges of the skillet. Add ground beef to the center and cook until browned, breaking it up as it cooks (about 6–8 minutes). Drain excess grease if needed.
  3. Stir in onion, bell pepper, and garlic. Cook 2–3 minutes until softened.
  4. Add ketchup, tomato paste, mustard, Worcestershire sauce, brown sugar, chili powder, and beef broth. Stir well and simmer 3–5 minutes until saucy and thick.
  5. Fold the potatoes into the sloppy joe mixture until everything is coated.
  6. Sprinkle cheese over the top, cover the skillet, and cook 2–3 minutes until melted. Top with green onions and serve hot.

Notes

  • Use lean ground beef to reduce grease.
  • Swap cheddar for pepper jack for extra spice.
