Description

Cheesy Beef & Potato Skillet – the ultimate one-pan comfort food with melty cheese, savory beef, and buttery potatoes.


Ingredients

Scale

1 lb baby potatoes (halved or sliced)

1 lb ground beef (or ground turkey)

1 cup shredded cheddar cheese

1/2 onion, diced

2 garlic cloves, minced

1/2 bell pepper, diced (optional)

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp garlic powder

Salt & black pepper, to taste

Fresh parsley or green onion, chopped (for garnish)


Instructions

1. Boil baby potatoes until fork-tender (12–15 mins), then drain.

2. In a skillet, heat olive oil and sauté onions and garlic.

3. Add ground beef, season, and cook until browned.

4. Add potatoes and bell pepper, stir gently to combine.

5. Top with shredded cheddar, cover until melted (2–3 mins).

6. Garnish with parsley or green onion and serve hot.

Notes

Use ground turkey or plant-based crumbles for a lighter version.

Shred your own cheese for better melting.

Store leftovers in an airtight container up to 4 days.
