Ingredients

  • For the Crust:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup granulated sugar
    • 1/2 cup (1 stick) unsalted butter, melted
  • For the Cheesecake Filling:
    • 16 oz cream cheese, softened
    • 1/2 cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
  • For the Apple Layer:
    • 2 medium apples, peeled and finely chopped
    • 2 tbsp brown sugar
    • 1/2 tsp cinnamon
  • For the Streusel Topping:
    • 1/2 cup brown sugar
    • 1/2 cup all-purpose flour
    • 1/4 cup old-fashioned oats
    • 1/2 tsp cinnamon
    • 1/4 cup unsalted butter, cold and cubed
  • Caramel Drizzle (store-bought or homemade)

Instructions

  1. Mix graham cracker crumbs, sugar, and melted butter. Press into a lined 9×9 pan. Bake at 350°F (175°C) for 8 minutes.
  2. Beat cream cheese, sugar, eggs, and vanilla until smooth. Pour over the crust.
  3. Toss chopped apples with brown sugar and cinnamon. Sprinkle evenly over the cheesecake layer.
  4. Combine streusel ingredients and use fingers or a fork to make crumbs. Scatter over the apples.
  5. Bake at 350°F for 30–35 minutes. Cool completely, then chill for at least 2 hours. Drizzle with caramel just before serving.
