- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup (1 stick) unsalted butter, melted
- For the Cheesecake Filling:
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- For the Apple Layer:
- 2 medium apples, peeled and finely chopped
- 2 tbsp brown sugar
- 1/2 tsp cinnamon
- For the Streusel Topping:
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1/4 cup old-fashioned oats
- 1/2 tsp cinnamon
- 1/4 cup unsalted butter, cold and cubed
- Caramel Drizzle (store-bought or homemade)
Instructions
- Mix graham cracker crumbs, sugar, and melted butter. Press into a lined 9×9 pan. Bake at 350°F (175°C) for 8 minutes.
- Beat cream cheese, sugar, eggs, and vanilla until smooth. Pour over the crust.
- Toss chopped apples with brown sugar and cinnamon. Sprinkle evenly over the cheesecake layer.
- Combine streusel ingredients and use fingers or a fork to make crumbs. Scatter over the apples.
- Bake at 350°F for 30–35 minutes. Cool completely, then chill for at least 2 hours. Drizzle with caramel just before serving.

- Chill for at least 2 hours before serving for best results.
- Store in the refrigerator for up to 3 days.
