Ingredients

Scale
  • 1 tbsp olive oil
  • 14 oz smoked sausage, sliced into coins
  • 1 cup long grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 bell pepper (yellow or red), diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp Cajun seasoning
  • Salt & pepper, to taste
  • Fresh parsley (for garnish, optional)

Instructions

  1. Heat olive oil in a large skillet. Add sliced sausage and cook until browned.
  2. Stir in onions, garlic, and bell pepper. Cook until softened.
  3. Pour in the rice and stir to coat in the sausage drippings.
  4. Add chicken broth, Cajun seasoning, salt, and pepper. Stir, bring to a boil, then reduce to a simmer. Cover and cook for 18–20 minutes until rice is tender.
  5. Remove lid, fluff with a fork, and sprinkle with fresh parsley. Serve hot.

Notes

  • Use long grain white rice for best results.
  • Adjust Cajun seasoning to taste for more or less spice.
  • Garnish with fresh parsley for added freshness.
