Description

Crispy buffalo chicken quesadillas with a creamy dipping sauce make an easy weeknight dinner or game day snack.


Ingredients

  • 2 cups cooked shredded chicken (rotisserie works great)
  • 1/3 cup buffalo wing sauce (plus more to taste)
  • 2 cups shredded mozzarella or Monterey Jack (or a blend)
  • 4 large flour tortillas (10-inch)
  • 1 tbsp butter or oil (for crisping)
  • 1/2 cup mayonnaise
  • 1/3 cup sour cream (or Greek yogurt)
  • 23 tbsp buffalo wing sauce
  • 1 tsp ranch seasoning (or 1/2 tsp garlic powder + 1/2 tsp onion powder)
  • Pinch of salt and pepper

Instructions

  1. In a bowl, toss shredded chicken with buffalo wing sauce until coated.
  2. Stir together the dip: mayo, sour cream, buffalo sauce, ranch seasoning, salt, and pepper. Set aside.
  3. Lay out tortillas. Add cheese over half of each tortilla, then spoon on buffalo chicken, then add a little more cheese (helps it glue together). Fold tortillas in half.
  4. Heat a skillet over medium heat. Melt a little butter (or add a drizzle of oil).
  5. Cook quesadillas 2–3 minutes per side until deeply golden and crisp and the cheese is fully melted.
  6. Slice into wedges and serve warm with the creamy buffalo dip on the side.
