- 12 oz smoked sausage, sliced
- 1½ lbs baby potatoes, halved
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup baby carrots, sliced
- 5 large eggs
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- ¾ tsp salt
- ½ tsp black pepper
- 2 tbsp fresh chives, chopped
Instructions
- Heat olive oil in a large cast iron skillet over medium-high heat.
- Add potatoes and cook for 10–12 minutes, stirring occasionally, until golden and fork-tender.
- Add sausage, bell peppers, and carrots to the skillet and cook for 5–7 minutes until sausage is browned and vegetables are tender.
- Season with garlic powder, paprika, salt, and black pepper. Stir to combine.
- Push the sausage and potato mixture to one side of the skillet.
- Crack eggs onto the empty side of the skillet.
- Cover and cook for 4–6 minutes, until egg whites are set and yolks reach desired doneness.
- Sprinkle with fresh chives and serve hot.
