Ingredients

  • 1 tbsp baking powder
  • 1/2 tsp baking soda

  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup buttermilk (plus 12 tbsp if needed)
  • 1 tsp vanilla extract
  • 1 cup fresh or frozen blueberries
  • Extra butter or cream for brushing tops
  • Coarse sugar for sprinkling (optional)
  • Lemon Glaze:
  • 1 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 12 tsp milk (adjust for consistency)

Instructions

  1. Mix dry ingredients in a large bowl: flour, baking powder, baking soda, salt, and sugar.
  2. Cut in cold butter until the mixture is crumbly.
  3. Stir in buttermilk and vanilla extract, then gently fold in blueberries.
  4. Shape dough into a 1-inch thick rectangle, cut with a biscuit cutter, and place on a lined baking sheet. Brush with butter or cream and sprinkle with sugar.
  5. Bake at 425°F (220°C) for 15–18 minutes until golden.
  6. Whisk glaze ingredients and drizzle over warm biscuits.
