  • 1 tbsp butter (optional)
  • 2 ripe avocados
  • 1 tbsp fresh lime juice
  • 1/4 tsp kosher salt
  • 2 tbsp chopped cilantro (optional)
  • 2 tbsp diced tomato (optional)
  • 1 tbsp finely diced red onion (optional)
  • 4 slices sturdy bread
  • 12 tsp olive oil or butter (for toasting)

Instructions

  1. Toast bread until golden and crisp.
  2. Mash avocados with lime juice and salt. Stir in optional ingredients.
  3. Toss shrimp with olive oil and spices.
  4. Cook shrimp in a skillet for 1–2 minutes per side.
  5. Spread avocado mash on toast and top with shrimp.
