- 1 small zucchini, sliced
- 1 red bell pepper, thinly sliced
- 1/2 cup broccoli florets
- 1/2 cup mushrooms, halved
- 1 small carrot, diced
- 2 tbsp olive oil
- Salt & pepper to taste
- Green onion or sesame seeds for topping (optional)
Instructions
- Cook rice according to package directions.
- Cook ground beef with soy sauce, hoisin, sesame oil, and chili flakes until browned.
- Sauté mushrooms, zucchini, red bell pepper, carrot, and broccoli with olive oil, salt, and pepper until tender.
- Assemble the bowl with rice, beef, and veggies.
- Garnish with green onion or sesame seeds if desired.
