  • 2 large eggs
  • 1 tbsp butter
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 cherry tomatoes, halved
  • 2 tbsp red onion, diced
  • 1/2 tsp garlic powder
  • 1/2 tsp lemon juice
  • 1/4 tsp paprika (optional)

Instructions

Step by Step:

1️⃣ Toast the Bread:

  • Lightly toast the bread slices until golden brown.

2️⃣ Prepare the Scrambled Eggs:

  • In a small bowl, whisk eggs with a pinch of salt and black pepper.
  • Melt butter in a pan over low-medium heat and cook eggs, stirring gently, until soft and fluffy.

3️⃣ Mash the Avocado:

  • In a bowl, mash the avocado with a fork.
  • Add lemon juice, garlic powder, salt, and black pepper. Mix well.

4️⃣ Assemble the Toast:
