  • 2 cups bowtie (farfalle) pasta, cooked & drained
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup corn (fresh, canned, or frozen)
  • ¼ small red onion, thinly sliced
  • ¼ cup fresh cilantro or parsley, chopped

 For the Creamy Avocado Dressing:

  • 1 ripe avocado
  • 2 tbsp olive oil
  • 2 tbsp Greek yogurt or sour cream
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

Step by Step:

1️⃣ Cook the Pasta:

  • Boil pasta according to package instructions, drain, and rinse under cold water.

2️⃣ Prepare the Dressing:

  • In a blender or food processor, blend avocado, olive oil, Greek yogurt, lemon juice, garlic, salt, and black pepper until smooth and creamy.

3️⃣ Assemble the Salad:

  • In a large bowl, combine pasta, diced avocado, cherry tomatoes, corn, and red onion.
  • Pour the creamy avocado dressing over the salad and mix well.

4️⃣ Garnish & Serve:

  • Sprinkle with fresh cilantro or parsley.
