- 1 ripe avocado, diced
- 1 cup cherry tomatoes, halved
- ½ cup corn (fresh, canned, or frozen)
- ¼ small red onion, thinly sliced
- ¼ cup fresh cilantro or parsley, chopped
For the Creamy Avocado Dressing:
- 1 ripe avocado
- 2 tbsp olive oil
- 2 tbsp Greek yogurt or sour cream
- 1 tbsp lemon juice
- 1 garlic clove, minced
- ½ tsp salt
- ¼ tsp black pepper

1️⃣ Cook the Pasta:
- Boil pasta according to package instructions, drain, and rinse under cold water.
2️⃣ Prepare the Dressing:
- In a blender or food processor, blend avocado, olive oil, Greek yogurt, lemon juice, garlic, salt, and black pepper until smooth and creamy.
3️⃣ Assemble the Salad:
- In a large bowl, combine pasta, diced avocado, cherry tomatoes, corn, and red onion.
- Pour the creamy avocado dressing over the salad and mix well.
4️⃣ Garnish & Serve:
- Sprinkle with fresh cilantro or parsley.
