🔹 For the Avocado Cottage Cheese Toast:

  • 1 slice whole-grain or rye bread, toasted
  • 1/2 ripe avocado, mashed
  • 45 cherry tomatoes, halved
  • 2 tbsp cottage cheese
  • 1 tbsp microgreens or sprouts
  • Salt & black pepper to taste

🔹 For the Scrambled Eggs:

  • 2 eggs
  • 1 tbsp cottage cheese
  • 1/2 tbsp butter or olive oil
  • Salt & black pepper to taste
  • 1 tbsp microgreens (for garnish)

Instructions

Step by Step:

1️⃣ Prepare the Toast:

  • Toast the whole-grain or rye bread until golden.
  • Spread mashed avocado evenly on the toast.
  • Top with cherry tomatoes and cottage cheese.
  • Season with salt and pepper, then garnish with microgreens.

2️⃣ Scramble the Eggs:

  • Heat butter or olive oil in a pan over medium heat.
  • Crack the eggs into the pan and scramble gently.
  • Add cottage cheese and mix until combined.
  • Season with salt and black pepper.

3️⃣ Assemble & Serve:

  • Plate the scrambled eggs alongside the avocado toast.
  • Garnish everything with extra microgreens.
  • Enjoy with extra cherry tomatoes on the side!
