- 4–5 cherry tomatoes, halved
- 2 tbsp cottage cheese
- 1 tbsp microgreens or sprouts
- Salt & black pepper to taste

- 2 eggs
- 1 tbsp cottage cheese
- 1/2 tbsp butter or olive oil
- Salt & black pepper to taste
- 1 tbsp microgreens (for garnish)

Step by Step:
1️⃣ Prepare the Toast:
- Toast the whole-grain or rye bread until golden.
- Spread mashed avocado evenly on the toast.
- Top with cherry tomatoes and cottage cheese.
- Season with salt and pepper, then garnish with microgreens.
2️⃣ Scramble the Eggs:
- Heat butter or olive oil in a pan over medium heat.
- Crack the eggs into the pan and scramble gently.
- Add cottage cheese and mix until combined.
- Season with salt and black pepper.
3️⃣ Assemble & Serve:
- Plate the scrambled eggs alongside the avocado toast.
- Garnish everything with extra microgreens.
- Enjoy with extra cherry tomatoes on the side!
