Ingredients
½ cup brown sugar
1 ½ teaspoons ground cinnamon
2 large eggs, room temperature
½ cup granulated sugar
½ cup butter, melted
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 cups chopped apples (Pink Lady, Gala, or Honeycrisp)
Instructions
1. Preheat oven to 350°F (175°C) and grease a loaf pan.
2. In a small bowl, mix brown sugar and cinnamon; set aside.
3. In a large bowl, whisk eggs, granulated sugar, melted butter, and vanilla until smooth.
4. In another bowl, combine flour, baking powder, baking soda, and salt.
5. Gradually add dry ingredients to wet ingredients and mix until just combined.
6. Fold in chopped apples.
7. Pour half the batter into the pan, sprinkle with half the cinnamon sugar, repeat with remaining batter and topping.
8. Swirl gently with a knife for a marbled effect.
9. Bake for 50–60 minutes or until a toothpick inserted in the center comes out clean.
10. Cool in the pan for 10 minutes, then transfer to a wire rack.
Notes
For best flavor, use sweet-tart apples like Honeycrisp or Gala.
Let the loaf cool completely before slicing for clean cuts.
