Ingredients
1 lb ground breakfast sausage (turkey)
2 cups shredded cheddar cheese
1 1/2 cups Bisquick or any baking mix
4 large eggs
Instructions
1. Preheat oven to 350°F and grease a 12-cup muffin tin.
2. Cook sausage in a skillet over medium heat until browned. Let cool slightly.
3. In a large bowl, whisk eggs. Stir in cooked sausage, cheese, and baking mix.
4. Mix until a thick batter forms.
5. Spoon batter into muffin cups, filling 3/4 full.
6. Bake for 20–25 minutes until golden and a toothpick comes out clean.
Notes
Let sausage cool before mixing to avoid greasy muffins.
Store in fridge up to 5 days or freeze for 2 months.
Reheat in microwave 30–45 seconds.
